Melon & Cucumber Salad with Ricotta Salata

My favorite summer salad. Melons and cucumbers are cooling, fragrant, and hydrating stars of summertime. Pistachios bring a little crunch, lime juice brings some brightness and acidity, and ricotta salata brings some briny depth.
INGREDIENTS
1 small orange melon, like cantaloupe or charentais
3 Persian cucumbers
Pistachio oil
1-2 limes
Maldon salt
Ricotta salata
Chopped pistachios
METHOD
Cut melon and cucumbers into bite size pieces. Toss with lime juice, pistachio oil, and a little maldon salt. Taste and add a little more lime, oil or salt if needed. Sprinkle with chopped pistachos. Shave ricotta salata on top.
